1. One-Pot Creamy Chicken Alfredo
Creamy Chicken Alfredo is perfect for the pasta-lover in your life and there’s no need to worry about piled up dishes waiting to be washed with this recipe – it’s all done in one pot and is ready in less than 20 minutes!
Ingredients
- 500 g boneless chicken thighs (or breast)
- Salt and pepper, to taste
- 2 tbsp olive oil, divided
- 1 onion, diced
- 4 cloves garlic, minced
- 125 ml dry white wine, (optional)
- 250 g brown mushrooms, sliced
- 500 ml chicken stock
- 375 ml heavy cream, divided
- Extra salt and pepper, to taste
- 250 g tagliatelle, or other pasta
- 1 1/2 cups freshly grated parmesan cheese
- Fresh chopped thyme, to garnish
Directions
Season the chicken with salt and pepper. Heat half of the oil in a large pot over medium-high heat. Add the chicken thighs and sear on both sides until golden brown and cooked through. Slice into strips or cubes and set aside.
Add the remaining oil in the pot. Fry the onion until transparent, stirring occasionally. Sauté the garlic until fragrant, then add in the white wine and allow to reduce to half. Add the mushrooms and cook for about a minute, while stirring occasionally.
Pour in the stock and 2/3 of the heavy cream and season with salt and pepper. Bring to a gentle simmer, then add the pasta. Mix well, reduce the heat to a slow simmer while stirring occasionally, until pasta is al dente.
Stir in the parmesan cheese until it melts through the sauce. Remove from the heat immediately and slowly add in the remaining cream if the sauce is too thick for your liking.
Garnish with fresh thyme and extra parmesan, if desired.
2. Skillet Striploin with Mushrooms
We have another quick and easy dish for you that can be prepared in just one pan – Skillet Striploin. This recipe with wine and mushroom sauce is sure to dazzle any steak-lover.
Ingredients
- 500g beef striploin steak
- Pinch of salt and pepper
- 1 tbsp olive oil
- 1-2 tbsp butter
- 500g sliced fresh mushrooms
- 2 tbsp white wine or chicken stock
- 3 tbsp chopped green onions
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
Directions
Sprinkle the steak with a pinch of salt and pepper. In a skillet, heat oil over medium-high heat and cook steak to desired doneness on all sides. Remove from the pan and let rest while preparing the sauce.
In the same skillet, heat butter over medium-high heat and sauté mushrooms until tender. Stir in the wine or chicken stock and bring to a boil, stirring to loosen browned bits from the pan.
Stir in green onions, Worcestershire sauce, mustard and more salt and pepper, to taste. Cut the steak in half and serve with mushrooms and mashed potatoes (Optional).
3. Maple-Garlic Marinated Pork Fillet
This pork fillet with a delicious garlic-maple sauce recipe is a treat for the tastebuds – the perfect combination of sweet and salty!
Ingredients
- 2 tablespoons Dijon mustard
- 1 teaspoon sesame oil
- 3 cloves garlic, minced
- Ground black pepper, to taste
- 1 cup maple syrup
- 700g pork fillet
Directions
Combine mustard, sesame oil, garlic, pepper, and maple syrup. Place the pork in a shallow dish and coat thoroughly with the marinade. Cover, then chill in the refrigerator for at least eight hours, or overnight.
Remove the pork from the marinade and sear the pork fillet in a hot pan in 1 tbsp oil on all sides for 10 minutes. In the meantime, pour half the marinade into a small saucepan, and cook on the stove over medium-low heat for 5 minutes.
Transfer the pork to a preheated oven at 220°C. Pour the other half of the marinade over it and roast for 20-25 minutes until cooked through. Let rest for 10 minutes under foil.
Serve with the remaining cooked marinade and roast vegetables.
4. Roasted Leg Of Lamb
This roasted leg of lamb recipe is perfect for those who are less seasoned (pun intended) in the kitchen – It’s easy, fool-proof, and only requires a few ingredients.
Ingredients
- 2.5kg bone-in leg of lamb
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 1 tbsp chopped fresh rosemary
- 1 tbsp chopped fresh thyme
- 1 tbsp Dijon mustard
- 1 tbsp salt
- 2 tbsp ground black pepper
Directions
Preheat oven to 180°C. Line a roasting pan with aluminium foil and pat lamb dry with paper towels.
In a small bowl, combine garlic, olive oil, rosemary, thyme, Dijon, salt, and pepper and set aside. Then, using a sharp knife, score the top side of the lamb by making shallow cuts all over.
Place the lamb, fat side up, on a rack in the prepared roasting pan. Spread the garlic mixture evenly over the lamb, rubbing in thoroughly into the scored cuts.
Place into the oven and roast for approximately 1 hour 30 minutes – 1 hour 45 minutes, or until desired doneness. Let rest for 15 minutes before slicing. Serve immediately with roast potatoes.
